This blog post is all about processing chickens. We plan to add meat chickens to our farm and were curious to see what kind of methods and equipment other small flock farmers are using to process their chickens. There really is no way around it….getting our healthy, pasture raised chickens to the dinner table involves dispatching them quickly and humanely, and is the last (and very important) step in producing a high quality product that you will come to us for again and again. (I won’t go into all the factory farming and mass-production slaughtering issues here. There are plenty of videos out there for you to Google. After several days of deep freeze, snow, sleet, heavy rain and then even a thunderstorm in the middle of the night, the sun came out in all her glory Tuesday morning and the honeybees rejoiced! (What wild and changeable weather we have in South Carolina!)

Honeybees don’t soil in their own house, so the very minute that the temps warm up, they take short “cleansing” flights. I think they were having fun this morning, too, don’t you?

Got this in a text this evening from a new customer, Mary. She drove down from Charlotte last week to get 4 dozen eggs, and I was delighted to see a picture of her supper creation. She said that her grandson especially likes the blue eggs, and she no longer has to talk him into eating them. He’s eaten one every day!

Oh, and our eggs are from free range hens, hormone and antibiotic free, of course. $3.50 dozen or $12/four dozen. That’s a bargain! Every summer I plant a big raised bed of basil…just mix the tiny seeds in a quart of fine sand, sprinkle that over the soil, and rake it in lightly. The sand helps scatter the seeds and also helps me to see areas that I missed. I keep it lightly watered and, in a few days, the bed is covered with tiny leaves that soon grow into huge, fragrantly-flowered green clumps of delicious fresh basil for eating with our garden tomatoes, flavoring my home canned tomato soup, and making pesto. Or feeding our honeybees. They love foraging in the basil flowers!

In the picture below you can see some of them all lined up on the blossoms. They brush against the leaves and release the aroma of fresh basil all throughout the garden. On hot, sunny, days, there are so many honeybees and native bees and wasps in the basil that if I don’t remember to pick leaves in the early early morning, I don’t have the courage to go near the bed, let alone reach in to cut a bunch! While beautiful when falling and fresh, it was wonderful to see the snow melt away in a just few days. That’s one of the many things we love about living in South Carolina…the mild winters and fleeting snows!

Remember these little girls? Rosie is the white Saanen and Daphne is the Nubian. I got Rosie from Mahaffey Farm (thank you Jeff & Dee Dee!) when she was just a few hours old. Daphne came from a breeder in Casar, NC (thank you Paula!).
