Here’s a really simple salad recipe for your Easter Sunday family meal. This is a traditional Pennsylvania Dutch salad, and pairs beautifully with our delicious Fox Trot Farm Easter leg of lamb roast with rosemary and garlic.
PA Dutch Lettuce & Egg Salad
4 cups chopped lettuce (a mix of spring greens, leaf lettuce, and iceberg for crunch is perfect)
1/2 cup chopped onion
Hard cooked Fox Trot Farm eggs, peeled and sliced (see NOTE below)
1/2 cup heavy cream
4 tablespoons white vinegar
4 tablespoons sugar
1/2 teaspoon salt (or to taste)
Freshly ground black pepper
Rinse, dry and chill lettuce. Chill salad bowls or plates (I put them in the freezer).
Whisk together cream, vinegar, sugar, and salt to make dressing. Chill.
Arrange lettuce on plates, sprinkle with onion, tomato, and sliced eggs.
Drizzle salad dressing over top.
Sprinkle with ground black pepper to taste.
NOTE: Steaming our Fox Trot Farm very fresh eggs will give you perfectly cooked and easy to peel eggs. Just put them in a steamer basket over boiling water, cover, and set your timer for 20 minutes. Immediately plunge steamed eggs in a bowl of ice water to cool. Crack and peel and enjoy!
